I made my sugar free low carb cookies using chopped pistachios rather than the usual nuts.
I was surprised at how good they tasted and smelled. I liked that they were a bit chunky too as I had used a low carb baking mix to bake them.
The other day my husband came home with a bag of pistachios not in their shell.
I love a pistachio but, for me, part of the enjoyment of eating them is dealing with the shell. It might have something to do with when I was a kid and my finger tips would turn red from the shells- anyone else remember that?
My challenge was to find a use for these pistachios.
