This is the time of the year that we are all over soup.
Soup is that warm and hardy food that warms the body. It also reminds us of those cold winter days from our childhood. At least, it does that to me.
This is one of those soups that will really fill you up.
There are times when I enjoy a broth soup. Usually, that is when the soup comes with a salad or a sandwich. Then there are those days when you want a soup that will be a meal in itself. This would be one of those kinds of soup. However, I would not hesitate at eating this soup with some sliced bread or something yummy to dip into it too.
This soup is as much about the ingredients as it is about the soup itself.
Obviously, the beer that we add to this soup gives this a special and unique taste. However, don’t forget about the cheese as the kind of cheese that we add with the beer is also important. I’m a fan of both to be honest.
Some beers work better than other beers just as some cheeses do too.
When it comes to a soup that has both beer and cheese in it, I find that it is important that the two work together to complement their tastes. Depending on the cheese that you would use, some kind of an ale beer would be a good choice to use in a soup. I like to balance the cheese and beer so that neither takes over the other when it comes to over-all taste of the soup.
I like to use cheddar cheese- both mild and sharp in a recipe such as this one..
I like the flavor of cheddar and I like the way that it works so well in a soup. Another cheese that I like to use in a recipe like this one would be Gruyere. Gruyere is a flavorful cheese that works well in a lot of recipes.
The beer we add to this recipe is also important.
I am pairing my cheddar with a seasonal ale. I love that there are so many great seasonal beers around this time of the year. The seasonal beers that I have tried from my local liquor store all seem to come from small breweries and have such a wonderful taste. One local store will let you assemble your own six packs with beers of your choice. This is such a great way to taste different beers.
I am a huge soup fan during this time of the year.

This beer cheese soup recipe is for a hearty and delicious soup to enjoy this time of the year.
- 1 Stick- Butter
- 1/2 Cup- Chopped Carrots
- 1 Teaspoon- Minced Garlic
- 1/4 Cup- Chopped Onion
- 1/3 Cup- Flour (AP)
- 3 Cups- Chicken Stock
- 1 12 ounce bottle- Beer- Ale preferred
- 2 Cups- Milk (whole preferred)
- 4 Cups- Grated Cheese- Cheddar Preferred, Can Mix Cheeses
- 2 Teaspoons- Worcester Sauce
- 1 Teaspoons- Dijon Mustard
- To Taste- Salt, Pepper, Seasonings
- As Needed for Toppings Chopped Scallions etc
