I like that this recipe seems so decadent to me.
By decadent, I mean that this recipe is a bit more rich tasting than a basic chocolate pudding recipe. The chocolate taste certainly also makes this a rich tasting treat as well.
You may be asking what kind of chocolate is used for chocolate mousse.
I like to use sugar free semisweet chocolate chips because they are so easy to work with in a recipe such as this one. However, for a more rich or chocolate taste, you could use sugar free bittersweet chocolate chips in this recipe.
There is a difference between sugar free semisweet chocolate chips and sugar free bittersweet chocolate chips .
Bittersweet is a darker chocolate and thus, less sweet. On the other hand, semisweet is a softer chocolate that may have other ingredients, such as a milk product, added to it. I find that it melts easier and is easier to use in many recipes as a result.
I mentioned earlier that you could top your mousse with my homemade sugar free whipped cream.
This recipe calls for heavy whipping cream. However, you could easily use my recipe for homemade sugar free whipped cream instead.
There is a difference between heavy whipping cream and whipped cream.
As you may suspect, the heavy whipping cream, as well as heavy cream, has a higher fat content and as a result, will hold its texture better. But, whipped cream has a slightly smaller amount of fat in it. Both whipping cream and whipped cream are relatively low in carbs and sugar and are friendly to low carb and keto diets.

How to make Keto Sugar Free Chocolate Mousse
- Place a mixing bowl in the refrigerator to chill while you work. In another mixing bowl beat the egg yolks on high until they thicken. This should take about 2 ½ to three minutes. Then beat in your sugar alternative.
- In a saucepan on low-medium heat, heat half of the whipping cream (about 1 ¼ cup) until hot.
- For the next step we are going to add half of the heated whipping cream to the egg mixture. We will gently stir the mixture and then transfer it back to the saucepan with the remaining heated whipped cream. You can use a spatula and or whisk to help you in this step. Once the mixture has been transferred to the saucepan, bump the heat down to low and stir or whisk constantly avoiding bubbling or sticking to the pan.
- Next, stir in vanilla and chocolate chips and turn off the heat. Allow it to cool for a few minutes and then transfer it to a mixing bowl . Cover the mixing bowl and refrigerate for an hour and a half, stirring every thirty minutes.
- Remove the refrigerated mixing bowls (both) from the refrigerator. In the first bowl (the empty one from the first step) beat the remaining whipping cream on high for about three- five minutes to allow it to stiffen up. Then transfer the the whipped cream to the second bowl, using a spatula to fold it in. Refrigerate the mouse until serving. You can top it off with couple of berries on top or a bit of whipped cream.
