Recently, I decided to get back on the wagon.
When I say 'back on the wagon' I mean get back to a low carbohydrate, or low carb, lifestyle. Following a low carb lifestyle really helps me lose a few pounds and feel good about myself.

However, I also like to bake bread.
We all know that baking bread can lead to eating carbs. For me, that means a cycle. I really have no complaints as I like having it both ways even though I cannot necessarily have both ways at the same time.

When it comes to a low carb lifestyle, a spinach and cheese casserole is a real winner.

One cup of spinach has about one carbohydrate in it. Also, most hard cheeses have one to no carbs in a serving. Thus, a spinach and cheese casserole can be a good choice for someone looking for a low carb meal to eat.

When it comes to calling something 'lazy girl', I will stand up and claim to be that 'lazy girl'.
Even though I have been a 'woman' for a while, I still hold to the 'girl'. But, to be serious, this is indeed a perfect food to make for someone wanting something easy yet, low carb to eat. Thus, it gives you a chance to be 'lazy'. Sometimes, lazy can be a good thing. Right?

The recipe for Lazy Girl Spinach and Cheese Casserole

This recipe really is about the cheese and the spinach.
Keep this as low in carbs as possible by using low in carbohydrate ingredients such as cheddar cheese and low in carbohydrate onion soup.

What you will need to make this recipe.

  • Spinach- 20 ounces cooked (usually in 2 10 ounce packages).
  • Greek Yogurt (as low carb as possible, can sub in sour cream)- 2 cups.
  • Dry Onion Soup Package (the stuff used in dips for example)- 2 cups.
  • Shredded or grated Cheese- 1 cup plus additional (as needed) for topping. I use cheddar for the casserole and a white cheese such as mozzarella and/or parmesan (combining is fun) for the topping.
  • Egg- 1 whipped.

How to make Lazy Girl Spinach and Cheese Casserole

This is a recipe that you can easily prepare in advance.

  • Preheat your oven to 350. Heavily prep your casserole dish for nonstick.
  • Start by draining any remaining liquid from your spinach.
  • In a mixing bowl, combine all ingredients except for the cheese that you have designated for the topping. This is a 'lazy' recipe and this would be why 🙂
  • Pour the mixture into your casserole and top with your additional cheese.
  • Bake for 30-35 minutes or until the casserole appears to be set in the center.
  • Remove from the oven and allow to sit for at least 10 minutes before serving. Serve while warm.
