Because we use cauliflower rather than pasta, we can make this casserole lower in carbs than the typical casserole.
Low Carb Cauliflower Casserole
This is actually a filling dish to eat.
I like that the vegetables are already in it and thus, I do not have to add any on the side.
Even thought cauliflower is not carb-free, we can still make this casserole lower in carbs.
The average head of cauliflower has an average of 17 net grams in it. Because there are eight servings in this casserole, each serving has an average of just over 2 carbs in it. Not bad for a casserole if you ask me!
To give this casserole some crunch, you do have several options.
The first option is to use precooked bacon such as one of these. You could also use pork rinds. However, folks who do not eat pork can use a low carb cereal or low carb breadcrumbs.

As mentioned, you have a few options for the crunch portion of this recipe.
The first option is to use precooked bacon such as one of these. You could also use pork rinds. However, folks who do not eat pork can use a low carb cereal or low carb breadcrumbs.
What you will need to make this
- Cauliflower- 1 head broken into florets or pieces.
- Melted butter- 1 tablespoon
- Sour Cream- ½ cup.
- Cream Cheese- 3 ounces, softened to room temperature.
- Shredded Cheddar Cheese- 1 cup.
- Crunch Option- ½ cup.

- Grated Parmesan- ½ cup.
- Optional Seasonings to taste- such as salt, pepper, etc.
How to make Low Carb Cauliflower Casserole.
- Preheat your oven to 400. Lightly prep your casserole dish for nonstick.
- Place the cauliflower in the casserole dish and toss it with the melted butter. Next, top the cauliflower with any optional seasonings. Place the casserole dish into the oven to bake for 20-25 minutes or until it begins to brown.
- Meanwhile, in a mixing bowl, blend together the sour cream and cream cheese.
- Stir in the cheddar cheese and'crunch option'.
- When the cauliflower has started to brown, stir in the contents from the mixing bowl. Top with the grated Parmesan cheese. Turn the oven down to 350 and bake for 20-25 minutes or until the casserole is heated through and beginning to bubble.

I make this however I precook the cauliflower to half cooked.
I also have cooked cauliflower and mashed it like potato and made casserole.
I have topped the dish with pork rinds for a nice crunch.
