We all know that macaroni and cheese is the quintessential comfort food.
However, this is a version that is also perfect for parties, tailgates, and more.
You certainly could make it a big hit when you share this with your friends!
 

Obviously you will need a few ingredients to make this recipe.

You will need to get low carb elbow pasta- which you can find here. There are also gluten free options for elbow pasta.You will also need beer. I recommend something with a bit of flavor such as an amber beer.

The recipe for Low Carb Mac and Cheese Made with Beer

As mentioned, You will need to get low carb elbow pasta- which you can find here. You will also need beer. I recommend something with a bit of flavor such as an amber beer.
 

What you will need to make this

 

  • Low Carb Elbow Pasta- 14- 16 ounces (depending on product that you purchase), prepared as directed. There are also gluten free options for elbow pasta.
  • Butter- ½ stick (¼ cup).
  • Flour Alternative- ¼ cup. Make this recipe gluten free by using gluten free flour instead of regular flour. Or, you can make this recipe low carb by using low carb Carbalose flour.
  • Beer- 1 12 ounce bottle, a flavorful amber is preferred.
  • Milk, Cream, or similar dairy- 1 cup. You a thicker product for a more robust mac and cheese or
    up to a skim milk to lessen the fat.
  • Shredded Cheese- 3 cups total. Here are my shredded cheese choices. Sharp Cheddar, Gouda, Provolone, Gruyere, and/or Fontina. When you use more than one kind of cheese, take into consideration how your cheeses will get along with one another. For a truer tasting Mac and Cheese, stick to the cheddar. For a sophisticated taste, Gouda, Provolone, Gruyere, and/or Fontina are good choices.
  • Seasonings to taste. Such as Salt, pepper, paprika, or garlic.
  • Parmesan Cheese- ¼ cup grated.

How to make Low Carb Mac and Cheese Made with Beer

 

  • Preheat your oven to 350 and prep a large baking dish for nonstick.
  • Place your prepared pasta into a large mixing bowl and set this aside.
  • In a sauce pan over low-medium heat, melt you butter, Once the butter has melted you can whisk in the flour alternative. The you can whisk in the beer and milk, whisking continuously. Do not burn this and take care to scrape the sides and bottom of the sauce pan. This should thicken in a few minutes.
  • Once the sauce has thickened, remove it from the heat and stir in the shredded cheese. You can add your seasonings here as well. Then combine this with the cooked pasta that is in the large mixing bowl from the first step.
  • Transfer the mix to your prepared baking dish and top with the Parmesan Cheese.
  • Optional- some folks like to top this with bread crumbs or panko. You can find low carb Panko and breadcrumbs online here.
  • Bake this for 35-40 minutes or until it begins to bubble. Allow this to cool before serving.

Ingredients

  • 14 ounces Low Carb Elbow Pasta prepared as packaged
  • ¼ Cup Butter
  • ¼ Cup Carbalose Flour
  • 12 Ounces Beer
  • 1 Cup Milk
  • 3 Cups Cheddar Cheese Shredded
  • ¼ Cup Parmesan Cheese

Instructions

Let's be honest. We all know that regular macaroni and cheese can be loaded with carbohydrates.

The average recipe for this favorite comfort food can yield over 40 carbs per serving. That is more than the average low carb diet allows in an a day.

Thank goodness that there is a way to enjoy eating macaroni and cheese without all of the carbohydrates that come with the regular recipe.
I can tell you that it would be hard for me to get through a good binge session without an evening that consisted of sweat pants and mac and cheese. However, I am a fan of lowering the carbs and still enjoying this idea as well.

To make this recipe for low carb mac and cheese we simply have to make a few adjustments to a normal recipe for this favorite.

The most obvious adjustment that we would have to make would be to the pasta itself.
One cup of cooked regular elbow macaroni pasta can have as much as 80 carbohydrates in it. However, using an alternative to regular elbow pasta can cut that carb number down. I know that I was happy when I first discovered lower carb pasta. There are a lot of varieties of lower carbohydrate pasta to choose from online including elbow varieties.

A normal macaroni and cheese recipe also calls for flour to be added to it.
The flour is needed to help our mac and cheese obtain it's desired consistency. However, we will be using a lower carb flour. If you have been around here before than you know that I have mentioned Carbalose flour in the past. Carbalose helps us turn a recipe that calls for flour into a lower carbohydrate recipe that calls for flour. You can find Carbalose low carb flour here.

Also, we can also make an adjustment to one last ingredient.

Using whole milk or half and half can normally add to the richness of texture and taste that helps make mac and cheese be such a comforting favorite. However, one cup of milk adds about 12 grams of carbs (most varieties have around 12 per cup), which may not seem to be a lot but, we are adding two cups of it. Thus, you may want to substitute an unsweetened almond milk which can have as little as 2 grams of carbohydrates per cup.
