This salad is the perfect summer meal especially, for someone following the low carb lifestyle.
To be honest, I love pasta. We try to have a pasta night every week. When I make pasta, I always make extra so that I can use the leftovers in another meal.
This Salad is the perfect recipe for using up leftovers.
I would totally know this right? You could make your pasta fresh as it would only take about 20 minutes to make it and allow it to cool in time to use in a salad. However, having it already made, and cooled, can certainly cut down on the time it takes to make a meal especially when you are in a pinch for time.
This can also be made in advance.
We all know that this is forever-loved item in just about every pot-luck, summer picnic, or barbecue. Imagine how impressed everyone will be when you show up with a low carb version of this.

That would be the secret ingredient in this recipe. While you may be avoiding it due to the carbs in it,this one is okay when you are sticking to a low carb dies. This is Atkins approved as well.

This recipe calls for cherry tomatoes. Cherry tomatoes are small and only contain about 1/2 carb in each. So, slice them up and toss them in- just not too many.

These items, such as cheese, are foods that you would normally find in a low carb recipe. They will add add color, texture and bulk to the salad. Add these optional foods as optional items to personalize your salad. You can make this into a vegan or vegetarian by personalizing with optional ingredients.
