What I really like about this Quick and Easy Strawberry Vinaigrette Salad is that not only is it colorful, it is light.
A salad that is both colorful and light is perfect to eat during the summer. I also like that this salad incorporates both fruit and vegetables in it.
Quick and Easy Strawberry Vinaigrette Salad
I find that when I am having a friend or two over for lunch on a warm day, they like to be ‘wowed’ by something unique.
When I say ‘unique’ I mean that they are impressed when I serve them something that is colorful and representative of summer. I also mean something that is different. Combining fruit in a salad with a homemade dressing is something different as well.
After all, we often associate summer by the delicious colorful fruit that is in season.
When I see fresh strawberries in the produce aisle I know that it is indeed summer. Not only are strawberries yummy and healthy, they seem to remind us of the patriotism that is often around us during the season.
I love that fresh fruit can be added to a quick and easy strawberry vinaigrette salad.
We love to adding strawberries both in the dressing and in the salad itself. A strawberry inspired salad is the perfect lunch especially when I am entertaining my friends for lunch.
Strawberries are such a delicious treat!
We love that we can bake with strawberries, add them to smoothies, or simply eat them as they are.
There are so many ways to enjoy a strawberry as they are. I also lie to slice strawberries and top a cake with them. Everyone seems to enjoy them in our cereal as well as a delicious salad.
It is also good to note that the average strawberry has just 4 calories.
Many experts say that strawberries are one of the healthiest foods that we can eat. Strawberries contain fiber and natural sugar. Strawberries also have a bit of Vitamin C. I guess that they must be pretty good for us as well.
This recipe is not sugar free.
While I try to stay as sugar free as possible, I do include fruit whenever I can. Fruit, such as strawberries, contain natural sugar. Limiting the amount of strawberries, or fruit, that I eat helps me in my daily diet. Many experts seem to say that strawberries are fine for those of us concerned about sugar in the blood as long as we enjoy them in moderation.
This is indeed a summer salad.
A summer salad is known best for containing a variety of greens in them. These greens seem to vary in sizes, shapes, and shades of green. They are not your standard iceberg variety of lettuce,
You can usually find a variety package of mixed greens at the grocery store. However, you can also make your own. Look for these greens to include in your summer salad:
- ‘Baby lettuce’ such as romaine, red leaf, and butter
- Chard- red or green
As you can see, if you are not making a large salad to share for a number of people, opting for a pre-made bag of mixed greens may be a better economic choice to make. Rather than purchasing a lot of different kinds of greens, which can be costly to do. Be sure to wash your greens well. I always use a salad spinner to wash my salad because it is so easy to use. Also in this salad:
I like to add a few sliced strawberries per serving and some halved walnuts- about three or four walnuts per serving.
The Recipe for the Strawberry Vinaigrette Dressing:
You will need:
Frozen or fresh strawberries work best. If you are using bagged strawberries, be sure that there is nothing else added to the bag besides strawberries (ie-sugar or similar products)
- Strawberries- 1 cup halved and stems removed
- Apple Cider Vinegar-2 tablespoons
- Extra Virgin Olive Oil- 2 tablespoons
- Sugar Alternative- 1 tablespoon sugar equivalent – can use a honey or sugar free honey etc
- Lemon Juice -1 tablespoon
- Salt and Pepper and seasonings to taste
To make this dressing, simply add all of your ingredients together in a blender and blend.
Transfer to a bottle to store in the refrigerator for at least 30 minutes. You can find the perfect bottle, made just for homemade dressings, on Amazon.
Prior to serving, whisk the dressing or gently mix it in the bottle. Then you can easily toss this withyour salad and serve.
Store in a refrigerator and whisk together if not using this immediately. It should keep for a few days.
