I am sure that we have all seen the regular sugared versions of this recipe.

Sugar Free Chocolate Covered Peanut Butter Balls.

I am pretty sure that what I like best about this recipe is the thought of the soft peanut butter melting in my mouth. Of course, that would only happen after breaking into the chocolate covering.

Technically, this is a no-bake recipe.
Usually, when we think of 'no-bake' we think of an easier than normal recipe. It must have something to do with not having to deal with using an oven. However, this recipe takes a bit of time to make as we will be using the refrigerator to help us out.

There really are not a lot of ingredients that we need for this one.

We will be using sugar free powdered sugar. You can use my recipe for sugar free powdered sugar or you can buy your own sugar free powdered sugar online.

We will also need peanut butter in this recipe.
You can keep this as sugar free as possible by using peanut butter without added sugar in it, which you can also find online. Lastly, you will need sugar free chocolate chips.

Sugar Free Chocolate Covered Peanut Butter Balls

The recipe for Sugar Free Chocolate Covered Peanut Butter Balls

Here is what you will need to make this recipe.

  • Peanut Butter (sugar free if possible)- 2 cups.
  • Butter- ½ stick melted.
  • Sugar Free Powdered Sugar (see above for details)- 1 cup.
  • Vanilla Extract- 2 teaspoons.
  • Sugar Free Chocolate Chips- 1 package (8-10 ounces).

How to make Sugar Free Chocolate Covered Peanut Butter Balls

  • Line a cookie pan, or similar pan with sides, with wax or parchment paper. Set this aside.
  • In a medium bowl, combine together the peanut butter, butter, powdered sugar, and vanilla extract. This could get crumbly and if it does, you can use your hand to complete mixing these ingredients. When you are able to work small amounts of this mix into 1" balls, set the individual balls on to the prepped pan.
  • After the balls have all been formed, place the pan into the refrigerator for 20 minutes or into the freezer for 10 minutes.
  • When you are ready to proceed, melt the chocolate either in the microwave or over the stove. Using a fork, skewer or similar item to dip each individual ball into the chocolate. Once fully covered with chocolate, return the ball to the pan and proceed to the next peanut butter ball.
  • Return the chocolate covered balls to the refrigerator until set (at least 25 minutes in the fridge or 12 minutes in the freezer).
