How to make Pumpkin Cake Mix Cookies.
- Servings: 18 cookies
- Prep Time: 10 minutes
- Cook Time: 20 minutes
- Start by preheating your oven to 325 and prepping a baking sheet (or two) for nonstick. I like to use parchment paper for a recipe such as this one.
- Place the cake mix along with the pumpkin pie spice in a large mixing bowl. Use a whisk to mix the ingredients and to break up any lumps that may be present. Then add in the pumpkin puree and vanilla extract to the bowl and mix until just combined.
- Use a medium cookie scoop to scoop out the cookies and then place them on to the baking sheet(s). Place the cookies about two inches apart from one another and do not flatten them.
- Bake the cookies for 18 to 20 minutes or until the cookies appear to be baked through. They will bounce back when you carefully and lightly touch them on top. Then allow the cookies to sit on the baking sheet for five minutes before transferring them to a cooling rack to fully cool.
- To make the frosting, simply combine together the ingredients until creamy (you may need to beat the ingredients for a few minutes to get there). My cookies have additional pumpkin pie spice sprinkled on top .

Tips for making the best cake mix pumpkin cookies.
This recipe is made with pumpkin puree. Make sure that you are using pumpkin puree that has no added ingredients (such as sugar) added to it.
More helpful tips for you.
- The cookies should be baked until the edges turn golden brown and the outside of the cookies are set to touch. The cookies however will still be soft in the center but, will set as that cookies cool.
- Feel free to fold in optional ingredients to the cookie dough. I like sugar free chocolate chips, chopped walnuts, or even raisins for this cookie.
- Allow the cookies to cool and set completely before frosting and storing them. This will help them retain their moisture and texture while preventing the frosting from melting.
How to store cake mix pumpkin cookies.
The fully cooled cookies should be stored in an airtight container. I would store the frosting separately as it will make it both easier to store the cookies in a container and the frosting should also be refrigerated (allow the frosting to soften to room temperature before using). If properly stored, the unfrosted cookie should be good for up to a few days at room temperature or longer when frozen.
