- Pecans. The pecans should be chopped very fine. You can use a food processor if needed.

Prep Time: 10 minutes.
Bake Time: 20 minutes.
Cool Time: 1 hour.

- Start by outfitting your mixer with a paddle attachment and beating the butter for a minute to soften up. Then add the granular sugar alternative and a half cup of the powdered sugar alternative to bowl and beat until creamy.
- Scrape down the sides of your mixing bowl and then stir in the vanilla extract.
- Add the flour to the mixing bowl and mix until just combined. Then fold in the chopped nuts.
- Cover the cookie dough and refrigerate for about an hour to get firm.
- When you are ready to bake the cookies, preheat your oven to 325 and prep your rimmed baking sheet(s) with parchment paper or with a baking mat.
- Use a cookie scoop to scoop out the dough, shape the cookies as desired (round, crescent, or puck for example) and place the cookies on to your baking sheet about two inches apart.
- Bake the cookies for 18 to 20 minutes or until the bottom sides of the cookies begin to brown.
- Remove the cookies from the oven and let them site for about ten minutes on the baking sheets. Meanwhile, place the remaining sugar free powdered sugar into a shallow bowl.
- Once the cookies are cool enough to touch, roll them in the powdered sugar alternative to coat them and then place the cookies on to a wire cooling rack to finish cooling. This step can be repeated if needed.
- You can sprinkle the remaining powdered alternative over the cookies while they are cooling.

What ingredients you will need to make these Sugar Free Mexican Wedding Cookies
- Butter- 1 cup + 1 tablespoon (17 tablespoons total) softened to room temperature.
- Granular Sugar Alternative- ½ cup equivalent to sugar. Please use a granular sugar alternative that measures 1:1 with sugar.
- Vanilla Extract- 2 teaspoons.
- All Purpose Flour- 1 ¾ cups. To make this low carb, use a low carb all purpose flour. Also, to make this keto use a keto all purpose flour. Lastly, to make this recipe gluten free, use an all purpose gluten free flour
- Nuts- 1 cup chopped. I like a pecan nuts in this recipe. However, almonds or walnuts or even a combination of these choices are all good tasting bets in this cookie.
- Sugar Free Powdered Sugar- ½-3/4 cup. You can make your own sugar free powdered sugar using this recipe or you can buy sugar free powdered sugar already made online.
How to make Sugar Free Mexican Wedding Cookies
- If baking now, preheat your oven to 300 and line your cookie sheets with parchment paper.
- Start by creaming together your softened butter with the granular sugar alternative at a low speed in a mixing bowl. Then blend in the vanilla extract.
- Next, we will add the flour to the mixing bowl. It is best to do this by adding half of the flour at a time, mixing gently between additions. Then you can fold in the chopped nuts.
- For this next step we will shape the cookies into balls (or other shape such as crescent) and place the cookies onto the prepared cookie sheets. Tip: use a tablespoon to scoop out the cookie dough to make your cookie size consistent. Also, if your cookie dough seems to be a bit sticky, you can coat your hands with a bit of flour or oil.
- Bake for 18-20 minutes and allow to cool on a cookie rack, When cooled, roll the cookies in the powdered sugar to coat them.
