Delicious Sugar Free Rum Cocoa Brownies Recipe
I remember the day that I found out that there were no carbs in Rum.
I’m not a big rum drinker but, I do like to make an occasional dessert using it.
When I was on a carbohydrate conscious diet, I learned how to experiment with recipes.
Surprisingly, I was quite successful at both the diet and with my recipes. I still like to bake a lot of those recipes from that diet era of my life. If the recipe includes chocolate, I am all over it.
The surprising fact about rum is that it is carb-free.
I was shocked to learn this as I assumed that anything made with sugar cane byproducts must be loaded with sugar and carbs.
I learned that the sugar that we thought would be in the rum actually doesn’t pass through the distillation process. Sweet! Right?
We use other ingredients in this recipe as well.
Cocoa is naturally unsweetened.
Bakers can use unsweetened cocoa. Unsweetened cocoa is naturally sugar free but, be sure to read the label to make sure that yours is too.
Use dark rum to bake this.
Bakers find that dark rum seems to be the rum of choice for most baking recipes. Using dark rum is usually the more flavorable rum and thus, the rum taste in your brownies will be more profound than if you had used a light rum. When I bake, I like to use a cheap booze in general.Rum tastes the same in a recipe thus, you can save some money going cheap on it here.
Make this low carb or regular carb.

However, you can also use regular all purpose flour in baking this because it will not alter the taste .
The Recipe for Delicious Killer Cocoa Rum Brownies
- Flour or flour alternative- 1/2 cup
- Baking Powder- 1/2 teaspoon
- Salt- dash
- Sugar Alternative- 1 cups or equivalent
- Unsweetened Cocoa- 1/3 cup
- Eggs- 2
- Butter or Coconut Oil - 1/2 cup or 1 stick melted
- Rum- 1 tablespoon
- Optional- bittersweet chocolate- 4 squares or 1 ounce- can use chocolate chips can use sugar free chocolate chips
- Optional- chopped nuts 1 cup
Preheat your oven to 350 and prep your pan for nonstick. I like to use parchment paper or a silicon square.
In a large mixing bowl, combine together the flour/alternative, baking powder, salt and sugar/alternative. Set this bowl aside.
In another bowl,combine the butter/coconut oil and vanilla. Then beat your eggs into the mixture.
Add the wet ingredients to the dry ingredient bowl that was set aside. Add the rum and any optional items. Mix without over mixing.
Spread the batter into your prepped pan and bake for 35-40 minutes or until a toothpick comes out clean. Allow to cool prior to cutting.
People love to eat these brownies!
However, try not to eat too many in one sitting because you will not have many left for later.
