I made this sheet of shortbread with the intention of using the shortbread later on a the basis for a pie crust.
If I were not intending on using this as a pie crust, I would have made cookies out of this rather than as a sheet.
Either way, I am a sucker for buttery tasting shortbread, alone or as a pie.
uuuuggghh… or is it ahhhhhh 🙂
Sugar Free Shortbread
This is such a classic recipe and it is so basic. So, why not make it sugar free?
Here is what I used for this
- 2 sticks room temp Butter
- 2 cups Flour
- 1 tsp Vanilla Extract
- 1 cup Splenda or similar alternative
Prep time: Cook time: Total time: Yield: 1 half sheet or 20-24 cookies
