Hi..I just made your yellow cake recipe and mine turned out not fluffy like your picture, but 2 thin cakes from 8 inch pans and pretty buttery…I followed your recipe I believe , where I sifted all purpose flour with cornstarch and baking powder and salt then had a whole stick of butter (1/2 cup) with Pyure organic Stevia (1/2 cup since only need 1/2 cup to equal 1 cup of sugar)…and then the eggs and vanilla and milk….do you know why it came out flat and greasy? Is there an update on the yellow cake recipe because I love the idea of low sugar for a cake? Thank you!!
Hi. Make sure that your baking powder is fresh as baking powder can make results like this when it is not fresh or if something has gone wrong with it. Also, it sounds like the balance of dry ingredients to wet ingredients may have been thrown on since you used 1/2 cup of sweetener. I always suggest using a sweetener that measures 1:1 with sugar in baking in order to keep the balance of ingredients the same. Thanks!
