Keto Low Carb Mac and Cheese

  • Preheat your oven to 425. Prep a square baking dish well for nonstick (grease if possible with oleo or butter). This recipe contains melted cheese. 🙂 Also, make sure that you butter is melted.

  • In a large mixing bowl , use a whisk to combine together the melted butter, sour cream, heavy cream, garlic, salt and pepper. Next, stir in the riced cauliflower. Then transfer the mixture to your prepped baking dish. Make sure that you spread the mixture evenly.

  • Top the mixture with the cheddar cheese and then the bacon. Bake for 20-25 minutes or until the cheese is melted. Top with the parsley and allow to set for a few minutes before serving.

Recipe Notes

I mentioned that an 8 X 8 square baking dish was used in this recipe. Feel free to use the baking dish that works best for you. Keep in mind however, that the larger the baking dish the less deep you mac and cheese will be.
Also mentioned was that cheddar cheese is also in this recipe.
Personally, I like the sharp kind of cheddar cheese. You can use the cheddar cheese of your choice however, I suggest using one that is full fat rather than low fat as this is a low carb keto recipe.
