  • Preheat your oven to 325 and prep your muffin pan for nonstick.

  • In a medium mixing bowl, use a fork or whisk to combine together the almond flour, coconut flour, baking powder, baking soda, and salt.

  • Next, in a large mixing bowl, beat together the melted coconut oil with the monk fruit. Then beat in the almond milk and eggs. Add the dry ingredients from the first bowl to the wet ingredients in the second bowl. Stir until just combined- do not over-mix. Then gently fold in the blueberries.

  • Bake for 20-25 minutes or until the muffins begin to brown. Allow the muffins to fully cool before transferring them to storage.

I mentioned that this recipe should make 12 average sized muffins.
Feel free to use a smaller muffin pan to spread out the carbohydrates even more.
 
Also mentioned, due to the use of sugar alternatives, muffins can come out dry,
To help hold on to the moisture in your muffins you can sub in part of the almond milk with sour cream, buttermilk, or even plain yogurt if you are not concerned about any added carbs or sugar that may be in these products.
