Sugar Free Blueberry Pancake Bundt Cake

  • 2 cups Sugar Free Pancake Mix - see post for details and options.
  • 2 tsp Baking Powder
  • Water - or milk, as much as you would need to use 2 cups of mix. See post for details.
  • 1 tsp Vanilla Extract
  • 1 cup Blueberries
  • Toppings as desired

Instructions

  • Preheat your oven to 350. Double prep a bundt pan. This means for best results, use two methods of nonstick. For example, nonstick spray and then dust with flour. Then place the blueberries on the bottom of the bundt pan.

  • In a mixing bowl, use a fork or a whisk to blend together the pancake mix with the baking powder. Then stir in the liquid (milk or water) and the extract. Mix until just combined- do not over mix.

  • Evenly pour the mixture over the blueberries in the bundt pan. Bake for 20-25 minutes or until the cake begins to brown. Allow the cake to cool for 10 minutes. Tip: gently running a butter knife around the perimeter of the cake just out of the oven can help loosen the cake for later removal from the pan.

  • To remove the cake, place a large plate over the cake and flip the cake over so that it sits on the plate. Be patient as you want the entire cake to come out in one piece. Then top with sugar free powdered sugar or your choice of toppings and serve.
