Sugar Free Chocolate Panna Cotta

  • This recipe works with six average sized ramekins or eight small ones. Use the ramekins of your choice. I like to give the ramekins a quick spray with nonstick. Place the ramekins on a rimmed baking sheet that is lined with parchment paper.

  • In a small mixing bowl, use a fork or a whisk to mix together the unsweetened gelatin with the water. Set this aside while you work (should set for 10 minutes). Next, in another mixing bowl, use a fork or a whisk to mix together the monk fruit sweetener, unsweetened cocoa powder, salt and ground coffee.

  • Place the heavy whipping cream in a saucepan not yet on heat. Use a fork or a whisk to stir in the dry ingredients from the last bowl along with the vanilla extract. Break up any clumps that may appear. Place the saucepan onto the stove and set the heat to medium. Stir in the gelatin from the first step and allow for the ingredients to boil. You will need to stir continuously as it heats. Once the mixture begins to boil wait one minute while still stirring and then turn the heat off and remove the saucepan from the heat

  • Allow the mixture to cool for a few minutes, stirring to preserve the texture as needed. Then divide the warmed mixture between the ramekins evenly. For serving as in in the ramekins, refrigerate for at least a couple of hours and serve. For serving unmolded, refrigerate for four three hours to overnight. Place the ramekins in a baking dish with hot water that reaches ⅓ way up the sides of the ramekins to loosen up the panna cotta for unmolding ( a half minute should work). Running a knife around the edges also helps.

This is because you want the gelatin that is added to set correctly.
 
Also mentioned, panna cotta is often served 'unmolded'
Pretreating the ramekins with nonstick spray can help with removing the panna cotta if you decide to not serve them in the ramekins. You can also place the ramekins in a baking dish with hot water that reaches ⅓ way up the sides of the ramekins to loosen them up ( a half minute should work).
