Sugar Free Coffee and Cream Popsicles

Equipment

Ingredients

  • 2 cups Coffee - see post for details
  • 3 tsp Stevia - or sweetener of choice or as needed
  • 1 cup Almond Milk - see post for alternatives
  • 1 cup Unsweetened Coconut Cream - see post for details and alternatives
  • ½ cup Sugar Free Chocolate Chips

Instructions

  • Start by blending in the stevia with the coffee. Pour the coffee into the mold filling the molds ⅓ of the way. Then place the molds into the freezer for 20 minutes .

  • In a blender or large bowl, blend together the milk with the heavy cream. Feel free to add additional sweetener if desire for taste. When the 20 minutes has subsided, pull the popsicles from the freezer and fill each mold another third of the way with the blended cream and milk. Then return this to the freezer for another 20 minutes.

  • Meanwhile, while the popsicles are in the freezer, combine the remaining ingredients together to make the last layer. Remove the popsicles from the freezer and fill the remaining ingredients to each mold. Freeze until hard.

Recipe Notes

This recipe calls for coffee that has already been brewed.
If you brew the coffee for use in this recipe, rather than using refrigerated leftover coffee, please allow the coffee to cool before adding it to this recipe.
 
Also mentioned earlier, you will need popsicle molds and possibly sticks for this recipe.
