Sugar Free Keto Chocolate Mint Cookies

Instructions

  • Preheat you oven to 350 and prep a cookie or baking sheet for nonstick. In a mixing bowl, use a fork or whisk to combine together the almond flour and the unsweetened cocoa powder.

  • Next, in a microwave-safe bowl, melt together the chocolate chips with the coconut oil. When you microwave, stop every thirty second to stir. Microwave until just melted. Allow this to cool for a few minutes. Meanwhile, lightly stir in the egg and the peppermint extract with the dry mixture form the first bowl. Then add the melted chocolate with the coconut oil. Stir until just mixed.

  • Use a spoon or small scoop to scoop our individual cookie dough for each cookie and roll the dough into a small balls. Place the cookie dough balls on to the prepped baking sheet, Press this in with the backside of a spoon or your hand for a flat cookie. Bake the cookies for for nine minutes . Remove the cookies from the oven and allow them to cool on the sheet for five minutes before transferring to a cooling rack. Once the cookies have fully cooled you can drizzle additional melted chocolate over them.
