  • Preheat your oven to 325. Prep a rectangular baking pan for nonstick.

  • In a medium bowl, use a whisk or fork to mix together the oats, flour, and baking soda. Then in a mixing bowl, beat together the butter with the brown sugar alternative until creamy. Add the eggs one at a time, giving a quick stir between additions. Then stir in the vanilla extract.

  • For the next step we will add the dry ingredients from the first bowl to the ingredients in the mixing bowl. Do this by adding half of the dry ingredients, then the other half. Mix the ingredients until just combined. Lastly, fold in the chocolate chips.

  • Then evenly spread the mixture into the prepared baking pan. Bake for 20-22 minutes or until the edges begin to brown. I like like to turn the pan around after about ten minutes for even baking.

  • Remove the pan from the oven and allow the bars to cool before using the extended parchment paper to life the bars from the pan to cut
