Ingredients

Frosting- see recipe for details and recipe. Also, additional crushed cookies for topping as desired.

    Instructions

    • Start by separating 20 sandwich cookies. The cookie portion will need to be crushed either in a food processor or in a zip top bag using a rolling pin. Place the filling in a bowl that can be used to make the frosting.
    • Preheat the oven to 325 and prep two baking sheets with parchment paper. Transfer the crushed cookies to a medium bowl and use a fork or a whisk to combine the crumbs with the flour and baking soda. Set this bowl aside
    • In a mixing bowl and the mixer set on medium speed, cream together the butter with the sugar alternatives. Add the dry ingredients from the medium bowl (crushed cookies etc.) and combine until just incorporated
    • Use a two inch cookie scoop to scoop each of the cookies and then place the cookies on to the prepared baking sheet. Then use the palm of your hand or the back of a large spoon to press the cookies into the baking sheet to about an inch thick.
Bake the cookies for 16-18 minutes or until the center of the cookies seems set. Remove the baking sheets and allow the cookies to cool on the sheets before frosting them.
    • To use the piping method, start piping in the center of the cookie and pipe a dot. Then without releasing pressure, pipe a tight circle around the dot.
      Top with additional crushed cookies.
