Sugar Free Baked French Toast Muffins

  • Preheat your oven to 350 and prep your muffin pan for nonstick.
  • Cut or tear your bread into ¾ to 1" sized cubes and place them into a shallow baking dish or large bowl.
    In a mixing bowl, use a whisk or fork to combine together the eggs, milk, syrup and cinnamon.
  • In another bowl or location of choice, use a potato masher or tool of choice to mash the bananas. Then blend the mashed bananas into the mixture in the mixing bowl.
    Once blended you can pour these ingredients over the bread, covering the bread well. You may need to use a fork to move the bread around or spoon to fully cover the bread with the mixture.
  • Evenly distribute the soaked bread pieces into the prepped muffin pan.
  • Bake the muffin for 20-25 minutes or until they begin to brown.
    Allow the muffins to sit in the muffin pan for five minutes to set before removing them to serve.
    Serve with additional sugar free syrup, sugar free powdered sugar, or as desired.
