Sugar Free Copycat Starbucks Coffee Cake

    Instructions

    • Preheat your oven to 300 and prep a square baking pan or a loaf pan for nonstick.
      Make your streusel as indicated in the directions.
    • In a medium bowl, use a whisk or a fork to mix together the flour, baking powder, baking soda, and salt. Set this bowl aside.
    • Next, in another bowl use a fork to mix together the Greek yogurt and the vanilla extract .
    • In a large mixing bowl, mix together the butter and sugar alternative until fluffy without over-mixing it.
      Then scrape down the bowl and stir in one egg. Repeat this two more times until all three eggs have been added.
    • For the next step we will add the ingredients from the bowl with dry ingredients and the bowl with the yogurt to the mixing bowl with the eggs. This is done three times which means you will need to add ⅓ of each of the bowls to the bowl with the eggs, gently stirring between additions.
      (Start by adding ⅓ of the flour mixture and ⅓ of the yogurt mixture, gently stir, and repeat two more times).
    • Now, fill your prepped pan ⅓ of the way using the mixed ingredients from the mixing bowl. Sprinkle ½ of the streusel over this.
      Add the remaining batter to the pan and top with the remaining streusel.
    • Bake this for 15-18 minutes or until there is some light browning. Then allow the cake to cool before serving.
