  • Prepare the crust as indicated. Allow the crust to set in the refrigerator.
  • In a mixing bowl, beat the cream cheese until creamy. Then add the powdered sugar alternative, unsweetened cocoa powder, and vanilla extract and mix until combined.
  • In a new mixing bowl and mixer fitted with a whisk attachment, beat the heavy whipping cream unit firm peaks form. Once your peaks for you can add this to the first mixing bowl and mix until combined.
  • Next, in a new mixing bowl and mixer fitted with a whisk attachment, beat the heavy whipping cream unit firm peaks form. Once your peaks form you can add this to the first mixing bowl and mix until combined.
  • Evenly transfer the filling to the jars that have been refrigerated. Refrigerate until set, at least two hours.
    Top the cheesecake jars before serving with any desired toppings such as fruit or whipped topping.
