Instructions

  • Start by melting the chocolate. You can do this in a microwaves, stopping to stir every 15 seconds. Or you can melt your chocolate using the stove method. then allow the chocolate to cool to room temperature.
    Also, you coffee should be brewed and cooled.
  • Meanwhile, beat the cheese (mascarpone or cream cheese) until creamy. Then mix in the cream until incorporated.
  • Next, mix in the liquid stevia, vanilla extract and cooled coffee.
    Lastly, stir in the melted chocolate.
  • Now you will need to beat the egg whites until they peak. Do this in a clean mixing bowl with whisk attachments that are also clean.
    Once you get the firm peaks, fold the egg whites into the first bowl with the other ingredients. Refrigerate the mousse for at least two hours before serving.
