Sugar Free Pumpkin Spice Truffles

  • Start by lining a rimmed baking sheet with parchment paper. The baking sheet should be able to fit into your freezer.
  • Next, crush the cookies into crumbs.
    Then transfer the crushed cookies to a mixing bowl.
  • In small bowl, use a fork or a whisk to combine the pumpkin spice, sugar free powdered sugar, and cinnamon. Then mix this in with the crumbs in the first bowl.
  • Use a rubber spatula to blend in the cream cheese and the pumpkin with the ingredients in the bowl. When you are able to form balls, use a cookie scoop to scoop out the ingredients, further rolling them into balls using your hands as needed.
    Then place the rolled balls on to the prepared baking sheet. Place the baking sheet in the freezer for about a half hour to set.
  • Melt the chocolate as indicated on the packaging.
    Use a spoon, skewer or fork to dip each of the truffle balls into the melted chocolate.
    Then place the covered truffles on to your prepped baking sheets.
    Sprinkle any optional crushed cookies on top of the truffles and refrigerate until set (about an hour)
