  • Start by preheating your oven to 350 and prepping a baking sheet for nonstick.
  • In a microwave safe bowl, melt together the mozzarella cheese with the cream cheese. While doing this, stop the microwave every 20 seconds to stir the ingredients.
  • Next, in a food processor or mixing bowl, combine together the first two eggs, baking powder, almond flour, and sugar alternative.
    Then add the melted cream cheese and mozzarella cheese and mix or process until a dough forms.
  • Divide the dough in half to make two batches. Roll the first half out into a 'rope' that is about 1-1 ½" wide. Then cut the rope into 1" pieces.
    Place the pieces on your prepared baking sheet.
    Repeat this process with the second half of the dough.
  • To make a wash for your pretzels, whip the remaining egg and brush it onto the pieces. Then you can sprinkle your salt on top.
  • Bake the pretzel bites until they turn golden (about 12 minutes). Allow the pretzels to cool before serving.
