Sugar Free Cheesecake Brownies

Ingredients

For the Brownie Base

For the cheesecake

Blueberry Swirl

  • 1 cup Blueberries
  • 2 tbsp Erythritol - see post for details and alternatives.
  • ¼ cup Water

Instructions

For the brownie base layer.

  • Prepare a baking pan with parchment paper that hangs over the edges of the pan.
  • Melt the chocolate as indicated on the packaging.
    Allow the chocolate to cool to room temperature.
  • Meanwhile, beat the eggs in a small bowl and set the bowl aside.
  • In a mixing bowl use a whisk to combine together the almond flour, baking powder, and unsweetened cocoa powder.
    Add the eggs, vanilla extract, and melted butter and mix until just combined.
    Lastly, fold in the melted chocolate.
  • Evenly distribute this mixture to the prepared baking pan

For the cheesecake layer.

  • Beat the cream cheese until soft and creamy.
    Add the sugar alternative and vanilla extract to the bowl and beat until combined.
  • Lastly, add one at a time to the bowl, mixing between additions.
    Evenly distribute this over the chocolate base

For the blueberry swirl.

  • Place the remaining ingredients (blueberries, remaining alternative, and water) in pot on medium heat. Use a wooden spoon to push down on the blueberries to release the juice from them as they cook.
  • Simmer the ingredients until thickened (about 10-15 minutes).
  • Use a large spoon to place dollops of the blueberry jam randomly on top of the cheesecake. Then use a toothpick or straw to create a swirl.

Finish making the cheesecake brownies.

  • Preheat your oven to 350.
    Bake the brownies for 25-30 minutes or until the top of the cheesecake is set. (To test it, shake the tray to assure that the center is not jiggly.)
  • Allow the cheesecake to continue setting and prevent cracking by turning off the oven and open the door for 20 minutes before taking the cheesecake out .
  • Transfer the cheesecake to the refrigerate for at least 45 minutes to finish setting before serving.
