  • Preheat your oven to 325 and prepare you muffin pan for nonstick (liners work well).
  • In a medium bowl, whisk together the self rising flour with the unsweetened cocoa powder.
  • Next, in a mixing bowl, beat together the sugar alternative and the oil until combined. Then add the oil, egg, and vanilla and mix until combined.
  • Add the dry ingredients from the first bowl to the mixing bowl and mix until just combined. Then carefully fold in the chocolate chips and cherries using a rubber spatula.
  • Bake for 20-25 minutes or until the muffins spring back when lightly touched.
    Allow the muffins to sit in the pan for ten minutes before transferring to a cooling rack to finish cooling.
