Instructions

  • Preheat your oven to 325 and generously prepare the pan for nonstick.
  • Start by making the crumble as this will be added to the cake pan before the other ingredients. Simply combine the crumble together in a medium bowl and work them into a crumble texture. Then evenly spread this over the inside of the pan.
  • For the cake, in a medium bowl, use a whisk to combine together the flour, baking powder, baking soda, and cinnamon.
  • Next, in a large mixing bowl, beat together the softened butter with the sugar alternative until creamy and fluffy. Then beat in the mashed bananas.
  • Add the eggs the mixing bowl along with the vanilla extract and the sour cream and mix until incorporated. Then add the dry ingredients to the bowl and mix until just incorporated.
  • Next, in a medium bowl, blend together the filling ingredients (brown sugar alternative, cinnamon, and flour).
  • Now, we will layer the cake ingredients for baking. Pour half of the cake batter from the mixing bowl into the prepped pan. Then top this layer with the filling layer.
Lastly, cover the filling layer with the remaining batter.
  • Bake the cake for 55-60 minutes or until a toothpick comes out clean.
Remove the cake from the oven and let it sit at room temperature for ten minutes. Then, place a plate on top of the cake and flip the cake over to release it from the pan.
Let the cake sit for another 20 minutes to cool down before adding the glaze.
  • For the glaze, simply combine the remaining ingredients together and pour the glaze over the cake.
