Instructions

  • Start by making the crust.
    Preheat your oven to 350 and prep a 9X11 baking dish for nonstick.
  • In a medium sized mixing bowl, mix together the almond flour, ground ginger, sugar alternative and melted butter. Once the mixture is somewhat crumbly, transfer it to the prepared baking dish. Press the crust into place evenly over the area of the baking dish.
  • Bake the crust for 10 minutes (or until it begins to golden brown). Then allow the crust to cool to room temperature. Also, bump the oven temperature down to 325.
  • Meanwhile, you can make the filling.
    In a mixing bowl, beat together the cream cheese, lemon juice, lemon zest, ground ginger and sugar alternative until creamy. Then mix in the eggs until just combined.
  • Transfer the mixture from the mixing bowl to the cooled crust, evenly spreading it over the crust. Bake the cheesecake bars for 35-40 minutes. The edges of the bars will be brown and the center will be jiggly- which is okay.
  • Allow the bars to fully cool to room temperature (takes about an hour) and then refrigerate the bars to finish setting (three hours).
