  • Preheat your oven to 325 and prep two baking sheets for nonstick.
  • In a medium bowl, mix together the flour, baking soda and salt.
  • Next, in a mixing bowl, beat together the butter and sugar until creamy. Then mix in the eggs, food coloring, and peppermint extract.
  • Add the dry ingredients from the first bowl to the ingredients in the mixing bowl and mix until combined. Then fold in the chocolate chips.
  • Use a one tablespoon cookie scoop to drop the cookies onto the sheets about two inches apart.
  • Bake the cookie for 12-14 minutes or until the edges begin to brown.
    Then let the cookies sit on the baking sheets for about a minute before transferring them to a cooling rack to finish cooling.
