  • Preheat your oven to 325 and prep two rimmed baking sheets with parchment paper or a baking mat.
  • In a medium bowl, use a whisk to blend together the flour, unsweetened cocoa, and baking soda.
  • Next, in a mixing bowl, beat together the butter and sugar alternative until creamy and fluffy (this can take a few minutes).
    Then add the eggs and vanilla, mixing until incorporated and creamy.
  • Add the dry ingredients from the first bowl to the mixing bowl and mix until just combined.
  • Use a medium cookie scoop to scoop out the dough on to the prepared baking sheets. Make sure that the cookies are a couple of inches apart from one another as they will spread while baking.
  • Bake the cookies for 12-15 minutes or until edges appear to be set and the centers are slightly crinkled across the top.
  • Let the cookies cool completely on the baking sheets at room temperature.
  • To make the filling, simple beat together the ingredients until creamy. You may need to make adjustments in the ingredients as needed to get your desired consistency.
  • Then use a piping bag or zip top bag with a cut corner to apply the filling to the insides of half of the cookies. Place the inside of a second cookie over or facing the filling to make a sandwich.
  • Lastly, refrigerate the cookies until the filling is fully set .
