Sugar Free Iced Lemon Cookies

Instructions

  • Use a stand mixer to beat your butter until smooth, light and fluffy. This process can take a few minutes.
    Meanwhile, in a smaller bowl, use a whisk to combine together the sugar free powdered sugar, cornstarch, flour, and lemon zest.
  • When the butter is done beating, you can scrape down the sides of the mixing bowl and then add the dry ingredients from the smaller bowl to the mixing bowl.
  • Next, beat the mixture until you have soft dough, scraping down the sides of the dough as needed. The dough should be able to stick together when pressed into a ball when it is ready.
  • Wrap the dough to plastic wrap or waxed paper and refrigerate for at least a couple of hours to overnight.
  • When you are ready to bake the cookies, remove the dough from your refrigerator and prepare a lightly floured work surface.
    Also, preheat your oven to 350 and prep a rimmed baking sheet(s) with parchment paper or a baking mat.
  • Unwrap the cookie dough and roll in out on the floured work space to about ¼ to ½" thick.
  • Use a round cookie cutter to cut out each of the cookies and then place the cookies about two inches apart on the prepared baking sheet(s).
  • Bake the cookies for 12-15 minute or until the edges begin to turn golden brown.
    Then remove the cookies from the oven and let them cool to room temperature on the baking sheet.
  • Transfer the cooled cookies to a cooling rack with the bottom sides (flat sides) of the cookies facing up.
  • To make the icing, simply combine together the remaining sugar free powdered sugar with the lemon juice until your reach a soft consistency.
    You may need to make adjustments as needed to get your desired consistency.
  • Use a spoon to coat the cookies with the icing.
    When the icing has fully set you can enjoy or store your cookies.
