Sugar Free Mocha Chocolate Chip Cookies

  • In a medium bowl use a whisk to blend together the flour, unsweetened cocoa powder, and baking soda.
  • Next, in a mixing bowl and using a stand mixer with a paddle attachment (preferred method), beat together the softened butter with both of the sugar alternatives until smooth.
    Then add the espresso, eggs, and vanilla and mix until combined.
  • Add the dry ingredients from the first bowl to the mixing bowl and mix until combined. Then fold in the chocolate chips.
  • Use plastic wrap to tightly cover the bowl and refrigerate the cookie dough for at least 15 minutes.
  • When you are ready to bake the cookies, preheat your oven to 350 and prep two baking sheets for nonstick (I like parchment paper for a recipe such as this one).
  • Use a cookie scoop to scoop out the cookie dough (mine were made with a large scoop) to scoop out the dough for the cookies.
  • Bake the cookies for 10-12 minutes or until the edges of the cookies appear to be set.
  • Then take the baking sheets out of the oven and let the cookie continue to set for another three minutes before transferring to a cooling rack to finish cooling.
