Ingredients

Optional flavorings such as vanilla extract (1 tsp) or seasonings.

    Instructions

    • In a medium saucepan on medium heat, combine together two cups of blueberries along with the sugar alternative, water, lemon zest and the lemon juice.
    • Cook the ingredients, stirring occasionally, until the blueberries have broken down and the compote has thickened. It should take eight to 10 minutes for the the blueberries to break up and released their juices for thickening .
    • Next, stir in the slurry (cornstarch and water mixture) and cook until thickened (about a minute or two), using a whisk to stir as needed.
    • Remove the mixture from the heat and stir in the remaining blueberries along with any additional flavoring (vanilla etc).
