Low Carb Summer Pasta Salad

A low carb version of a summer favorite pasta salad.

Ingredients

  • Low Carb Cooked Pasta- 1 10-14 box. See post above for ideas.
  • Mayonnaise or Olive Oil- 1 cup. Easy cheat for this would be to use a salad dressing such as Italian or Ranch. You could go ½ cup with two choices as well.
  • Seasonings to taste.
  • Optional Items- see above.
  • Cherry Tomatoes- 10 sliced in half.
  • Parmesan or similar Italian Grated Cheese- ½ cup.

Instructions

  • Cook the pasta as directed. Allow the pasta to cool entirely. (This is why this is the perfect leftover meal recipe.)
  • Toss the pasta in the oil/mayonnaise. Season this to taste if desired.
  • Add any optional items from the list above and toss gently.
  • Gently stir in the tomatoes taking care to not over stir.
  • Sprinkle with the cheese and serve.
