Ingredients

Instructions

  • Preheat your oven to 350 and prep a baking sheet with parchment paper .
    parchment lined cookie sheet
  • Sift or whisk together your flour, baking powder, sugar alternative, and salt in a medium bowl. Then cut the butter into the bowl. It may become easier for you to use your hands to help get the mixture to that crumbly texture that we want. Then set this bowl aside for a moment.
    sift
  • Next, in a mixing bowl, whip together the eggs and milk (or alternative). For this next step, we are going to combine the dry ingredients from the first bowl with the ingredients from second bowl for kneading. This step may be easier for you if you have a clean surface and transfer the ingredients from the first bowl to this surface in mound form then make a well in the center of the mound to pour your wet ingredients from the second bowl into. Knead this gently ( just a few turns should work) just to combine the ingredients. Lastly, gently fold in the blueberries.
    knead hand
  • To form the scones divide the mixture in half and then half again. Form each portion into a circle and then cut into wedges. You can do this on the prepped baking sheet from the first step. Bake your scones 20-25 minutes or until the begin to brown. Allow the scones to cool before applying the optional glaze.
