Low Sugar Whole Wheat Oatmeal Raisin Cookies

This is a low sugar whole wheat, oatmeal, and raisin cookie recipe.

Ingredients

  • Softened butter- 1 ½ sticks
  • Sugar Alternative- such as Splenda ¾ cup sugar equivalent
  • Coconut Palm Sugar or other brown sugar alternative - ½ cup brown sugar equivalent .
  • Baking soda- 1 tsp
  • Ground Cinnamon 1 tsp
  • Salt- ½ tsp
  • Vanilla extract -1 tsp
  • Eggs-2
  • Whole Wheat Flour- 1 ½ cups
  • Oats- old-fashioned or quick-cooking oats 3 cups
  • Raisins- 1 cup

Instructions

  • Preheat your oven to 350 and prep your pan for nonstick- I use parchment paper
  • In a mixing bowl, beat together your butter and sugar until creamy. Set aside.
  • In another bowl, combine together your baking soda, cinnamon, salt, vanilla extract, eggs, and flour.
  • Mix the contents of your second bowl into your mixing bowl
  • Blend in your oatmeal and raisins.
  • Bake for 8-10 minutes, allow to cool for a minute or two before serving. Enjoy!
