No Sugar Added Dutch Apple Pancake

A no sugar added way to make a traditional Dutch Apple Pancake. The sugar that is added comes naturally from apples

Ingredients

  • Baking Mix ¾ cup of
  • Eggs- 4
  • Sugar Alternative- 1 tablespoon equivalent to sugar.
  • Almond Milk- 1 cup can use regular milk or cream if desired
  • Vanilla extract- 1 tsp
  • Butter- ⅓ cup
  • Cinnamon- ½ tsp
  • Nutmeg- ½ tsp
  • Ground- Ginger ½ tsp
  • 2 large apples- tart green taste best but any variety of your choice will do. I like to use two different kinds.
  • Topping-  Mix together ⅓ cup of sugar alternative such as Splenda + 1 tbs of Cornstarch

Instructions

  • In a large mixing bowl, combine your eggs, milk, vanilla and baking mix. Mix these together and then set aside and allow to sit as you work.
  • In a small mixing bowl, combine your your sugar alternative, nutmeg, cinnamon, and and ginger. Set aside.
  • Preheat your oven to 400
  • Prepare your apples by coring them, slicing them in half and then into slices ⅓- ½" wide.
  • Use your skillet to melt your butter. Once melted, line your skillet with ½ half of your sliced apples and then pour your sugar alternative mix over this.
  • When the items in your skillet begins to bubble, pour the baking mix with other items in the large mixing bowl over this.
  • Cover the skillet with the remaining apples. You can top the apples with optional chopped nuts or additional sugar alternative or sugar.
  • Bake for 20-25 minutes.
  • Sprinkle the topping made with Splenda and Cornstarch before serving.

Recipe Notes

Limit the amount the sugar even more by limiting the amount of apples that you add to this recipe.
