Weight Watchers Okay, Sour Cream and Onion Mashed Cauliflower

A Weight Watcher's Friendly and Net Zero Carb alternative to sour cream and onion mashed potatoes.

Ingredients

  • For this recipe you will need:
  • Cauliflower- 1 head trimmed and broken up.
  • Greek Yogurt- ⅓ cup
  • Sour Cream and Onion Seasoning- 1 teaspoon
  • Optional: 1-2 tablespoons of allowed butter alternative or ½ tablespoon of Extra Virgin Olive Oil

Instructions

  • Start by cooking the cauliflower down. In a large pot set on medium to medium high, fill the pot ⅔rds of the way and allow it to boil
  • Once the water starts to boil,add the cauliflower and turn the heat down and allow it to simmer.
  • Simmer for 15-18 minutes or until cauliflower is soft.
  • Remove from heat and drain, taking into consideration that the water and the cauliflower may be hot.
  • Transfer the cauliflower to the food processor or whatever you may be using. Pulse until about half way pureed.
  • Now add your remaining ingredients and pulse until completely pureed and blended.
  • Serve warm
