Caesar Salad Sandwich Wraps

An easy way to make a great salad on the go. Simply add it to a tortilla or wrap.

Ingredients

  • This is for four wraps.
  • Tortilla Wraps- 4 8-9"
  • Chicken strips- 1 pound cooked and cut into strips. Can sub in small to medium shrimp or omit entirely.
  • Caesar Dressing- ½ cup homemade or bottled.
  • Grated Parmesan Cheese- ⅓ cup
  • Romaine Lettuce- 8 large leaves chopped or left as is.
  • Optional- Chopped Anchovies or Bacon Bits- 2 tablespoons
  • Also Optional- Seasonings to taste such as pepper, salt, garlic, etc.
  • And Optional- Chopped onions- ¼ cup
  • Optional- Roma tomatoes- 2 sliced ¼-1/2"

Instructions

  • First of all, if not cooked, cook chicken as directed on the package.
  • Since the Romaine lettuce can be used two ways here is how to use it as a result. While it could be chopped to be mixed in with the other ingredients, it can also be left as in to be used to line the wraps with.
  • In a mixing bowl, combine together the chicken, Parmesan cheese, chopped lettuce (if using), and any of the optional items if you are using these.
  • Toss the ingredients in the bowl with the Caesar dressing until the ingredients are well-covered.
  • Lie each tortilla/wrap flat on a clean surface. If using the uncut Romaine lettuce method, lie two leaves flat on each of the wraps.
  • Divide the mixture from the bowl into four quarters. Place each of the quarters into each of the wraps.
  • To roll each of the wraps, fold up one end about an inch and then roll it up. Secure with a toothpick if needed.
