Sugar Free Walnut Chia Muffins

Make this recipe for yummy chia and walnut muffins sugar free. You can also make this gluten free or low carb!

Ingredients

  • Chia seeds- 1 tablespoon.
  • Water- ½ cup.
  • All Purpose Flour- 1 ¾ cups see post for gluten free and low carb alternatives.
  • Brown Sugar Alternative- ½ sugar equivalent cup see post for details.
  • Sugar alternative- ¼ sugar equivalent cup .
  • Salt- pinch.
  • Baking Powder-1 teaspoon.
  • Baking Soda-1 teaspoon.
  • Greek Yogurt- ½ cup.
  • Eggs- 2.
  • Oil- such as vegetable oil ½ cup.
  • Vanilla Extract- 1 ½ teaspoon.
  • Walnuts- 1 cup.

Instructions

  • Before you begin, you will need to soak your chia seeds in the water. This is necessary to do in order to prepare the chia seeds for baking with. You can prepare the recipe as the seeds soak.
  • Prep a muffin pan for nonstick (this recipe makes about 12 average muffins) and preheat your oven to 350.
  • In a large mixing bowl, mix together your flour, sugar alternatives, salt, baking powder, and baking soda. Set this aside.
  • In another bowl, mix together the yogurt, eggs, oil and vanilla. Once these wet ingredients are mixed together you can slowly add them to the dry mix.
  • Next, you can fold in the walnuts and Chia seeds to the batter. Do this by hand.
  • Fill your baking cups about ⅔rds full.
  • Bake for about 25 minutes or until a toothpick comes out clean.
