Sugar Free Strawberry Pudding

A Sugar free or low sugar way to make homemade pudding.

Ingredients

  • Sugar Free Gelatin Mix flavor of choice- such as strawberry- 1 .3 ounce box
  • Corn Starch- 2 tablespoons.
  • Sugar Free Granular Sugar Alternative such as Splenda- ΒΌ cup.
  • Milk can use any variety or alternative -go here to see how to use Greek Yogurt- 2 cups.
  • Egg Whites or substitutes - 2 tablespoon equivalent.
  • Butter or alternative- 1 tablespoon.
  • Optional- sliced fruit for garnish or to stir in.

Instructions

  • Prep a serving or storing bowl that you will use to store this for nonstick. Using nonstick spray can be used. Set this aside.
  • In a mixing bowl, whisk or blend together with a fork your gelatin mix, corn starch and sugar alternative. Set this aside.
  • Now, in a saucepan over medium heat, heat together the milk, egg whites/substitute and butter. Stir this until blended- about 2 minutes. Then add the contents from the first bowl (the dry ingredients) and continue to cook and stir. When this begins to bubble, remove it from the heat.
  • Carefully pour this mixture into the prepared bowl from the first step. You can stir in or top with the optional fruit if desired or even use the fruit when you are ready to serve.
  • Cover the bowl with plastic wrap or similar air-tight well-fitting top. Refrigerate for at least three hours before serving.
