Homemade Sugar Free Fortune Cookies

A fun cookie that you can make yourself. This is a great idea for a party or other occasion.

Ingredients

  • Flour- ⅓ cup.
  • Salt- ½ teaspoon.
  • Sugar Alternative- 3 tablespoons equivalent to 3 tablespoons sugar. Granular works better.
  • Egg White- 1 .
  • Vanilla Extract- 1 teaspoon.
  • Butter- 3 tablespoons softened at room temp. Keep an extra tablespoon handy if needed for later.

Instructions

  • Preheat you oven to 375. Prep your cookie pans for nonstick. I use parchment paper. Use several cookie pans as you will be placing only a few cookies on the sheets at a time for baking. Also, prepare your 'fortunes' on paper and ink that is safe for baking. 3 ½ -4" by ½" wide works best.
  • Sift together your flour, salt, and sugar alternative. Set this aside.
  • In another bowl, whip together the egg white and vanilla extract. You want this to be just foamy but, not stiff.
  • Now, combine the two bowls of ingredients together and mix them together.
  • To prepare the cookies, use a scoop or tablespoon to drop the batter onto the cookie sheets. Each cookie should flattened (use the backside of a spoon or your hand if they do not fall into place) to be about 2 ½- 3" diameter circle. Leave plenty of space between cookies for spreading.
  • Bake your cookies for 7-9 minutes or until they begin to brown. Because we are only going to be baking a few cookies per sheet at a time, you will be able to work in rotations. Take the sheet out of the oven when the edges of the cookies begin to brown. Immediately transport each individual cookie to a cutting or similar board for (see next step) folding. Caution- the cookies will be hot.
  • To fold the cookie. Place the cookie upside down on to the cutting board. Place the individual fortune into the middle of the cookie. Fold the cookie in half (leaving room in the middle) and shape the cookie by bending it over slightly. To make bending the cookie even easier, try bending it over the rim of a bowl or cup. This may take a few tries to perfect. The cookies are easier to bend while warm.
  • If needed, warm yours up again for a few moments to fold.
  • Continue making each individual cookie until you are done. Allow the cookies to cool before topping if you will be making your cookies pretty.
