Lazy Girl Spinach and Cheese Casserole

An easy low carb and sugar free spinach and cheese casserole.

Ingredients

  • Spinach- 20 ounces cooked usually in 2 10 ounce packages.
  • Greek Yogurt as low carb as possible, can sub in sour cream- 2 cups.
  • Dry Onion Soup Package the stuff used in dips for example- 2 cups.
  • Shredded or grated Cheese- 1 cup plus additional as needed for topping. I use cheddar for the casserole and a white cheese such as mozzarella and/or parmesan (combining is fun) for the topping.
  • Egg- 1 whipped.

Instructions

  • Preheat your oven to 350. Heavily prep your casserole dish for nonstick.
  • Start by draining any remaining liquid from your spinach.
  • In a mixing bowl, combine all ingredients except for the cheese that you have designated for the topping. This is a 'lazy' recipe and this would be why :)
  • Pour the mixture into your casserole and top with your additional cheese.
  • Bake for 30-35 minutes or until the casserole appears to be set in the center.
  • Remove from the oven and allow to sit for at least 10 minutes before serving. Serve while warm.
