Sugar Free Chocolate Covered Peanut Butter Balls

A sugar free version of a favorite chocolate covered peanut butter candy treat.

Ingredients

  • Peanut Butter sugar free if possible- 2 cups.
  • Butter- ½ stick melted.
  • Sugar Free Powdered Sugar see above for details- 1 cup.
  • Vanilla Extract- 2 teaspoons.
  • Sugar Free Chocolate Chips- 1 package 8-10 ounces.

Instructions

  • Line a cookie pan, or similar pan with sides, with wax or parchment paper. Set this aside.
  • In a medium bowl, combine together the peanut butter, butter, powdered sugar, and vanilla extract. This could get crumbly and if it does, you can use your hand to complete mixing these ingredients. When you are able to work small amounts of this mix into 1" balls, set the individual balls on to the prepped pan.
  • After the balls have all been formed, place the pan into the refrigerator for 20 minutes or into the freezer for 10 minutes.
  • When you are ready to proceed, melt the chocolate either in the microwave or over the stove. Using a fork, skewer or similar item to dip each individual ball into the chocolate. Once fully covered with chocolate, return the ball to the pan and proceed to the next peanut butter ball.
  • Return the chocolate covered balls to the refrigerator until set (at least 25 minutes in the fridge or 12 minutes in the freezer).
