Mexican Grilled Corn on the Cob

Delicious Mexican Street Corn on the Cob Recipe.

Ingredients

  • Corn- 4 cobs husked, cleaned (Tip: I use a paper towel to remove what is left after husking), and with the ends cut off.
  • Olive Oil- 2 tablespoons.
  • Mayonnaise- ½ cup.
  • Chili Powder- 1 teaspoon.
  • Salt and Pepper- to taste.
  • Optional items- other seasonings such as garlic powder to taste. Also a teaspoon or so of hot sauce.
  • Crumbled Cheese such as Feta- ¼ cup.
  • Cilantro- ¼ cup chopped.
  • Lime- 1 cut into slices. 1 Slice per ear of corn.

Instructions

  • Make this with corn not on the cob by using a 16 ounce bag or can of corn and making this on the stove.
  • Prep your grate or grilling pan for nonstick prior to heating them up.
  • Brush each prepped corn cob with olive oil. Then place the corn on the warmed grill. We will be cooking the corn for a total of 8-10 minutes rotating throughout in order to cook evenly. When your corn appears to yellow with a bit of brown all over, you can remove it from the grill.
  • While your corn cooks, in a bowl, combine together the mayonnaise, chili pwoder,salt and pepper and any optional seasonings that you would like to add.
  • As soon as you remove the cooked ears of corn from the grill, transfer it to a baking dish and coat with your mayonnaise mixture. Sprinkle the cheese on top and then the cilantro.
  • Finally, squeeze the juice of a slice of lime on each ear and serve.
  • Making this on the stove with corn not on the cob? Simply cook the corn in a pan on the stove with the olive oil to the directions on the container. Then remove the corn from the heat and stir in the mayonnaise mixture. Top as described above and serve.
