Grilled Chili Lime Eggplant

A delicious way to enjoy grilled eggplant.

Ingredients

  • 1 Eggplant- Slice into ½" slices.
  • ¼ cup Olive Oil
  • 1 Lime - juiced
  • 3 tsp Chili Lime Seasoning
  • Optional toppings for visual and taste such as cilantro red pepper etc.

Instructions

  • Prep your grill grate with brushed olive oil or preferred method on nonstick. Then heat the grill to a medium heat.

  • Brush one side of the eggplant with oil and season it. Then place this side down on the grill and brush and season the other side.
  • Cook the eggplant for about two minutes and flip the slice over and cook for another 2-3 minutes or until the eggplant appears to be tender.
  • Remove from the grill and season to taste with leftover seasoning. Add any optional toppings.
